Chicken Broccoli Curry Casserole

Not a food blog, but this curry is delicious

No this isn’t a food blog, but we all gotta eat!

You will not have to ready an essay or scroll through a million pictures to get to the recipe, because this isn’t a food blog.  It is turning out to be a great way to start writing & get comfortable with the tech though.  Now for the recipe… delish!  If you prefer a spicy curry, just sub as much of your own favourite flavour as your taste buds can handle 🙂  Inspiration courtesy of Kalyn’s Kitchen!


Chicken Broccoli Curry Casserole

Prep Time: 15 mins
Cook Time: 40-45 mins

Ingredients:

• 3 c cubed deli rotisserie chicken or 4 boneless, skinless chicken breasts, cooked & cubed
• 1 bag frozen broccoli
• 1 c mayo (full fat)
• 1 c sour cream (full fat)
• 1 tbls lemon juice
• 3 tsp madras curry powder
• 1 ½ c grated cheddar cheese (full fat)
• 1 ½ c grated mozzarella cheese (full fat)
• ¼ c Parmesan cheese, grated
• Sea salt & pepper

Instructions:

1. Preheat oven to 375F/190C. Spray a 9” x 13” casserole dish with non-stick spray; set aside
2. In a bowl, mix together the grated cheddar & grated mozzarella; set aside
3. In a large bowl, mix together the cooked chicken, frozen or fresh broccoli, 1 1/2 cups of grated cheese blend & Parmesan cheese; spread mixture evenly in casserole dish
4. In a small bowl, whisk together the mayo, sour cream, lemon juice, curry powder, sea salt & pepper; taste to see if you would like more curry powder; pour mixture evenly over the chicken mixture in the casserole dish
5. Top with the remaining 1 1/2 cups of grated cheese blend
6. Bake uncovered for 40-45 mins, or until the casserole is bubbling hot & the cheese in nicely browned on top
7. Serve hot
