Simple Low Carb High Fat Supper

Tuesday’s simple low carb high fat supper – You are going to want to double the sauce!

If you are looking for a simple low carb high fat supper, I have the recipe for you!  Thanks to Peace Love & Low Carb for the inspiration 🙂

Here is my take on the recipe & as I mentioned, you are going to want to double the sauce so you can put it on EVERYTHING!  Yes it’s that good.  For those not watching their carb intake, a side of mashed potatoes (or riced cauliflower) would go great!

Rotisserie Chicken with Oven Roasted Brussels Sprouts & Garlic Parmesan Sauce

Prep Time: 10 mins
Cook Time: 45-55 mins

Ingredients:

• 1 deli rotisserie chicken• 1 bag frozen brussels sprouts
• ½ c chopped onion
• 1 tbls of bacon drippings
• 2 tbls of butter
• Sea salt & pepper
• 6 slices thick cut bacon, cooked & crumbled (optional)

For the Sauce

• ½ c heavy cream
• ½ c grated Parmesan cheese
• ¾ tsp garlic powder
• Sea salt & pepper

Instructions:

1. Place frozen brussels sprouts & onion in a single layer on a baking sheet or in a glass baking dish
2. Melt bacon drippings & butter together; mix & pour over the spouts; sprinkle with sea salt & pepper; toss to coat
3. Place baking sheet or dish in a cold oven; set the oven temperature to 425F/220C & bake for 45-55 mins, stirring once half way through
4. While sprouts are cooking, in a small sauce pan, over medium-high heat, add heavy cream, Parmesan cheese, garlic powder, sea salt & pepper
5. Bring to a boil & reduce heat to low; stir occasionally; let simmer & thicken for 5 – 10 mins
6. Pour sauce over the roasted brussels sprouts & tap with bacon crumble (optional)
7. Serve warm with deli rotisserie chicken
